Dec. 29, 2006

Nate and I had our two year anniversary a month ago and I never made a post about it. I was waiting because I wanted to do something fun for the post and have tried off and on to upload these videos. With the help of Nate, tonight we figured it out!

The first video is of Nate's proposal which we were lucky enough to have on camera. It's hard to tell exactly what's going on in this video so I'll try and explain...I threw him his birthday party with about twenty of our friends. He took the opportunity to propose when I least expected it. He had Lindsay in charge of the lights, Brent in charge of the music, and Glade in charge of the video. Other than that, no one else really knew about it! You'll notice he stops before blowing out the candles because for one, I tell him to make a wish, and two, everyone is chanting for us to kiss. Enough explaining, you can watch the rest!

The reason I dragged him across the floor was because I thought he was teasing me. Those of you who know Nate will understand why I might think that! If you can't tell, I was completely surprised/excited!

Happy Birthday Momma Rooks!



Today is my mother's birthday. I can not express how much I love this woman! Besides being an extremely gorgeous mom, she's also an AMAZING lady! If I could describe my mom in one word it would be "classy." I'll never forget what Nate said in his speech at our wedding luncheon. He made a point to thank my mom for being the woman she is and for the principles she has taught her children. He particularly thanked her for the modesty she exudes and for the quiet dignity she exemplifies. I can honestly say that many of the greatest things I have learned thus far, have come from her. I have big shoes to fill and hope that I can follow in her footsteps.


One of the things I love about her is how much she LOVES BYU football. It's funny to watch how into the games she gets!

Single Ladies

Sugar Coated Pecans


I got this recipe from my sister in-law Jess. She actually has it posted on her blog right now but I thought I would also post it for those who don't know her and check her blog. These pecans are SO good! They taste similar to the holiday nuts they sell around Christmas time! I made a batch today to put on our salads along with strawberries, mandarin oranges, green onions, and blue cheese; also with my mother in-laws homemade poppyseed dressing! They are also yummy just as a snack! Try this recipe, it's easy and good!

INGREDIENTS
1 pound pecan halves

1 egg white
1 tablespoon water

1 cup white sugar (I tried using 1/4 cup brown sugar and 3/4 cups white sugar and liked it)
3/4 teaspoon salt
1/2 teaspoon ground cinnamon

DIRECTIONS

In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.
Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on a foil lined baking sheet (for easy clean up).

Bake at 250 degrees for 1 hour. Stir every 15 minutes.
